Who says ice cream is a summer treat?
Or that it’s a dessert?
Well we beg to differ. After all it’s all about what you put into that ice cream and how you enjoy it – and we’ve created a vegan ice cream recipe without cream (or any dairy for that matter), eggs or added sugars. The best thing is it’s equally sweet and creamy, just like your dairy-based ice creams. We used only plant-based ingredients so it’s suitable for everyone.
On top of the thick, creamy texture our vegan ice cream is also a guilt-free treat as it’s full of micronutrients. Organic baobab powder, bananas and raw cacao powder all contain a high quantity of potassium. Baobab powder is also rich in B vitamins, calcium and iron and is a true vitamin C and fibre bomb. High quality raw cacao powder also contains iron and is one of the best sources of magnesium in the world (2,5 table spoons give you more than 25000 % of the daily need!)
You don’t need an ice cream maker to prepare this lovely treat, a blender and a bowl will do.
- 2 ripe bananas
- 100 ml coconut milk
- 3 tbsp. of raw cacao powder
- 2-3 tbsp. of organic baobab powder
- 1 tbsp of raw cacao butter
Peel the bananas and roughly chop them. Melt the cacao butter on a small pot. Put all the ingredients into a blender and mix until you have a smooth paste.
Pour the mix into a bowl (metal if possible) and pop it into the freezer shelf. Let it sit in the freezer for a few hours, stirring occasionally, every ½ hour or so. The mixture will start to freeze and get thicker so you want to make sure the consistency maintains. The result after a few hours should be an ice cream like texture you can easily scoop to serving bowls.
Serve with your favourite toppings! We really enjoy this with berries such as raspberries, strawberries or blueberries and coconut flakes. You can also let the texture stay a touch softer by keeping it less time in the freezer and you’ll have a delicious smoothie bowl you can top with granola & fruit. Or if you want to serve it like old-school ice cream, get some crispy ice cream cones and scoop the ice cream on top.
Tip! If you chop & freeze the bananas in advance you can prepare this delicacy a lot faster.
