It’s thick, it’s creamy and it’s fatty like the most delicious Greek yogurt. But there’s no cow, goat or any other animal milk in it! It’s a completely plant based yogurt and you’ll love it! It’s simply baobab and coconut. Many find coconut milk too sweet but the slightly tangy baobab cuts the sweetness of the coconut nicely – and the result is a yogurt that has the dairylike tartness but without any milk! And the best thing – on top the superb taste it’s packed with fibre and micronutrients, such as vitamin C, iron, B vitamins, prebiotics and probiotics.
- 1 can of coconut milk – cooled in the fridge for a few hours or over night
- 3 capsules of lactic acid bacteria (available in pharmacies & eco food shops)
- 3-4 table spoons of baobab powder
It’s the simplest yogurt ever. First you need a glass jar that’s been thoroughly washed in the dishwasher or boiled for a few minutes. Next, scoop the creamy part of the coconut milk that sits on top of the can and put it into the glass jar. Spoon in the baobab powdered, open the lactic acid bacteria capsules and pour in the fine powder. Stir well and add some table spoons of the liquid coconut milk that sits under the cream to reach the kind of consistency you prefer. Also, more baobab powder makes thicker yogurt so if you wish a touch runnier texture just decrease the quantity of baobab.
In the end place a muslin cloth or in case you lack one – kitchen paper – on top of the jar and tighten with rubber band. Let the yogurt sit overnight in room temperature on the kitchen table.
And hooray! In the morning you’ll have a nice, tasty batch of homemade, healthy baobab yogurt! Garnish with you’re favorite toppings; we decided to go with raw cacao nibs, blueberries and cherries.
