Our first foray into raw cooking and its delicious, these bites are dense and packed full with anti-oxidant goodness. They also only take 30 mins to make
- 2 tbsp Baobab powder
- 200 g almonds flour
- 125 g cacao nibs
- 50 g raisins or dates
- 50 g cacao powder
- 6 tbsp honey or preferred sweetener
- 2 tsp cinnamon powder
- 60 ml olive oil
- 60 ml water
In a blender or grinder, grind the cacao nibs. Put the almond flour, nibs and raisins in a food processor and process until the raisins are broken down. Then add in the cacao powder, baobab and cinnamon and process once more until it’s evenly mixed. Next, add your olive oil and honey, and process while the mixture starts to get sticky. Pour the water in slowly while mixing, it should become a dough at this point.
Press your dough into a square baking tray lined with greaseproof paper or a silicon mould. Leave it in the fridge to set for at least 2 hours. When you’re ready, cut it into squares. It will keep for about two weeks.
Makes 24 mini bites or 12 mega chomps.
Change the spices to suite your palate, try cardamom, anis or even chilli.
