Last autumn we introduced baobab & oat pancakes. Now we took a step further with pancake recipes: have a taste of grain & dairy free baobab & banana pancakes! Super simple, super healthy – you only need a few ingredients.

Baobab & Banana Pancakes

Ingredients:

  • 2 eggs (preferably organic)
  • 1 – 2 ripe bananas (depending on the size)
  • 2 tablespoons of baobab powder
  • 100 ml of thick coconut milk or coconut cream
  • 1 pinch of vanilla powder (optional)
  • 1/2 teaspoon of baking powder (optional)
  • fresh mint or other garnishes

Method:

Beat the eggs until foamy and whisk the baobab powder (and baking powder if using) into the mix. Mash the ripe banana(s) with a fork and mix together with egg batter. The dough should be thick but easy to stir. Add approx. 50 ml of coconut milk to the batter making sure it doesn’t get too runny.

Heat a pancake pan or a normal non-stick frying pan until hot, add a touch of extra virgin coconut oil or other oil / butter and a small ladle full of batter into the pan. Fry for about a minute, making sure pancakes won’t burn and flip over.

After frying the whole batch whisk the remaining coconut milk / cream until it forms soft peaks. This is a small amount so it’ll only take a few seconds. Serve baobab – banana pancakes with a dollop of coconut cream – or simply toss over some fresh berries, fruit or other delicious treats of your choice.
